If equation that time stamps when change happens in the next available cell on a new page

I have a Data validation drop down which has a "list from range" criteria which pulling from a different page with the following values: Under Contract, Contract Pending, On Deck for Contract, and Warming.

Each time the drop-down data validation is changed I am trying to have the exact time/date the action/change happened recorded on a different sheet on the available cell along with the value it was changed to.

Example:

11/03/2020 a New contact is added and the stage is set to "warming" Becasue this is a change I want it to trigger and on a new page in 1 column it should have the time/date it was changed: 12:00pm 11/03/2020 and in the column next to it I want to have what changed. In this case it went from a blank cell to "Warming" so Warming should be in the cell next to the date.

Later in this example lets say it gets changed to "On Deck for Contract" This would trigger a change so in the NEXT available sell UNDER

12:00pm 11/03/2020 Warming

Would be

1:52pm 11/12/2020 On Deck for Contract

Each change in the data validation would trigger a time stamp of when it happened and log what stage in the column next to it.

If there is a way to make an "IF" Equation that says If this cell changes add a new cell on "x" page on the next available space with the date/time the event took place next to what the change was
